Easy Homemade Pancake Recipe
I love the weekends, and especially Saturdays, as we have made this a time to spend with family, slow down a bit and enjoy one another. It’s been a tradition in our family that when we are home on the weekend, we will make some rendition of these healthy and delicious pancakes and do our saturday morning routine including prayer journaling & our favorite couples devotional. We like to have our pancakes with blueberries or bananas mixed in the batter and put butter & powdered sugar on top! We have since perfected this recipe and feel like these are the BEST tasting, light and fluffy whole wheat pancakes made from scratch!
Our “Slow Saturday” Morning Routine
We love having daddy home with us in the late morning. I was sitting on the couch and my heart just melted as they made blueberry pancakes together and I snapped these real life photos. ๐ As our “slow saturdays” have certainly looked different over the years with the addition of two kiddos, the importance of it has not disappeared. It has only increased as other things seem to distract us from what we truly seek- a deeper relationship with God & the people we love. Whole Wheat Pancakes
Recipe adapted from Skinny Taste.
Step one: Mix all dry ingredients
2 cups whole wheat flour (I use King Arthur flour found here, they also have gluten free flour here)
4 1/2 tsp baking powder
1/2 tsp salt
2 tsp ground cinnamon
2 tsp sugar
Add wet ingredients (below) to the mixing bowl and mix well with a spoon until there are no more dry spots; donโt over-mix.
2 large eggs
2 cups + 2 tbsp milk
2 tsp vanilla extract
1 tbs of coconut oil in batter or cooking spray so the pancakes don’t stick to the pan.
After you’ve mixed the dry and wet ingredients, heat a large skillet on medium heat. You can mix coconut oil into the batter so it won’t stick, or use butter/cooking spray. 1/4 cup of pancake batter. When the pancake starts to bubble, you cad add your fruit. We love to add sliced bananas or wild blueberries. When the bubbles settle and the edges begin to set, flip the pancakes. Repeat with the rest of the batter. Makes about 14 pancakes. Top with your favorite pure maple syrup or powdered sugar!
